Cat and the Hack Angband is an entertaining variant.  It makes quite a few changes to the race and class system, and completely revamps the critical hits formula.  It also adds a very interesting thing to the rings system. If you are wearing a ring of flames, and a plain weapon, your weapon acts like a * of burning weapon.  Some of the artifacts have this ability as well.
